Enchilada Casser-Ole! - Light Mexican Recipe

It's important when you make the decision to eat healthy to find ways to still get great flavor and eat your favorite types of food.  I LOVE Mexican food, so I had to find a way to keep eating it in a healthy way.  This is a great, easy recipe that lets me still enjoy the Mexican food I love so much!

Enchilada Casser-Ole!

Prep:  25 minutes  Bake:  30 minutes
Yield:  8 Servings


Ingredients

1 lb. lean ground beef                                                          6 flour tortillas (8 inch)
1 large onion, chopped                                                        3/4 cup light sour cream
2 cups salsa                                                                        1 cup shredded reduced fat cheddar cheese
1 can (15 oz.) black beans, rinsed and drained                    1 cup shredded lettuce
1/4 cup reduced-fat Italian salad dressing                            1 medium tomato, chopped
1 TBS taco seasoning                                                         1/4 cup minced fresh cilantro 
1/4 tsp. ground cumin

Preparation Instructions

1.  In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.  Stir in the salsa, beans, dressing, taco seasoning and cumin.  Place three tortillas in a 2 quart baking dish coated with cooking spray.  Layer with half of the meat mixture, half of the sour cream, and half of the cheese.  Repeat layers.
2.  Cover and bake at 4oo degrees for 25 minutes.  Uncover; bake 5-10 minutes longer or until heated through.  Let stand for 5 minutes before topping with lettuce, tomato, and cilantro.

1 serving = 357 calories, 12 grams fat, 45 mg cholesterol, 864 mg sodium, 37 grams carbohydrates, 3 grams fiber, 23 grams protein
